Crispy Dill Pickle Chicken Sliders

These Crispy Dill Pickle Chicken Sliders are golden, craggly, and stacked with bold flavor. Marinated in dill pickle juice and buttermilk, then fried until crisp, these sliders are finished with lemon red onions, dill pickles, and a spicy, creamy Hot Pickle Ranch.



The idea for these sliders came from the popularity of our Hot Honey Ranch chicken — but this time, the build is even more flavor-packed. The ranch is spicy and tangy. The onions are quick-pickled in fresh lemon juice. And the chicken? It’s crispy on the outside, juicy on the inside, and full of dill pickle flavor.








DIRECTIONS

STEP 1:
  • Marinate chicken in buttermilk, pickle juice, garlic powder, paprika, salt, and pepper. Chill for at least 1 hour or overnight.



STEP 2:
  • Whisk together flour, cornstarch, salt, black pepper, and cayenne. Dredge each piece of chicken and rest 10 minutes.

STEP 3:
  • Fry chicken at 350°F until golden and crisp (about 5 minutes per side). Drain on rack or paper towels.

STEP 4:
  • Thinly slice the red onion. In a bowl, combine lemon juice, sugar, salt, and warm water. Add onions and soak 10–20 minutes.

STEP 5:
  • Toast brioche buns with butter or oil until golden.

STEP 6:
  • Build each slider: Bottom bun, Hot Pickle Ranch, two dill pickle chips, crispy chicken, lemon red onions, another drizzle of ranch, and fresh dill on top.

INGREDIENTS

Makes 6 sliders


MARINADE

  • 3 boneless, skinless chicken thighs, cut in half

  • 1 C buttermilk

  • 1/2 C dill pickle juice

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper


DREDGE

  • 1 C all-purpose flour

  • 1/4 C cornstarch

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp cayenne (optional)


LEMON RED ONION

  • 1 red onion, thinly sliced

  • 5 lemons, juiced (about 1 C)

  • 1/2 tsp kosher salt

  • 1 TBSP sugar

  • 2 TBSP warm water


TO BUILD

  • Toasted brioche slider buns

  • Dill pickle chips

  • Hot Pickle Ranch

  • Fresh dill, finely chopped

This is exactly what I was looking for! Love that the pickled onions use lemon instead of vinegar. Absolutely delicious!
