Hey-Mami Chicken

Hey-Mami Chicken is a sticky, spicy-sweet chicken marinated in a garlicky, umami marinade. Watch the recipe video HERE.



The sauce for this chicken has Thai chili peppers, which are spicy, but they're not as hot as habaneros. We recommend starting with just one in the sauce and then add more later if desired.






DIRECTIONS

STEP 1: MARINADE
  • Add all the marinade ingredients to a mixing bowl and mix well.

  • Add the chicken and fully coat in the marinade.

STEP 2: MARINATE
  • Cover the mixing bowl and marinate in the refrigerator for 4-6 hours, or at least 30 minutes.

STEP 3: COOK
  • Grill over medium heat until the internal temperature reaches 170°F (about 10 minutes).

  • Alternatively, the chicken can be cooked at 400°F for 12-15 minutes in an air fryer or 25-30 minutes in the oven.

  • Give the chicken a flip halfway through.

STEP 4: HEY-MAMI SAUCE
  • Add the olive oil to a preheated skillet over medium heat.

  • Add the chopped garlic and cook until fragrant, then lower the heat.

  • Add the butter, honey, onion powder, black pepper, and paprika.

  • Mix well and then bring to a low simmer for 10 minutes.

  • Mix in the chili peppers.

STEP 5: COAT
  • Add the cooked chicken to the pan and fully coat it with the sauce.





INGREDIENTS

Makes 3-4 servings


  • 2 lbs boneless skinless chicken thighs

MARINADE

  • 1/3 C olive oil

  • 2 lime, juiced

  • 2 tsp sesame oil

  • 2 cloves garlic, minced

  • 1/2 C soy sauce

  • 1/2 tsp salt


HEY-MAMI SAUCE

  • 1-4 Thai chili peppers, thinly sliced

  • 1/3 C honey

  • 1/4 C butter

  • 3 cloves garlic, roughly chopped

  • 1 tsp onion powder

  • 1/2 tsp black pepper

  • 1/2 TBSP paprika

  • 2 TBSP extra-virgin olive oil

  • Salt to taste

Wow, that was excellent ! 👌🏽🤤


At the grocery store, the thai chili peppers were not looking good, so we took what was left... Jalapenos. It was not spicy, but it was better than nothing.


We will absolutely redo that recipe !!


Let's hope that they have good thai peppers next time. 🤞🏽

Edit.. don't add lime to the finishing sauce it cuts the sugar and also adds too much acidity but was still delicious.. the ginger can gwan tho 😌

Same as above. A staple for me now.. absolutely perfect. I did it over a fire the first two times but tonight I marinated for 2 hrs then put in a pan with a couple tablespoons of canola oil and quick seared most sides then put into a pan with the marinade and simmered briefly then threw into the sauce to quick simmer briefly.. tonight added lime and ginger to the finishing sauce.. we will see how it goes 🙃 excellent recipe.

This was AMAZING!

My 19 yr old daughter and I made this together, and it will become a staple in our homes. The flavors are wonderful and sauce is unbelievable.
