Hey-Mami Chicken is a sticky, spicy-sweet chicken marinated in a garlicky, umami marinade. Watch the recipe video HERE.

The sauce for this chicken has Thai chili peppers, which are spicy, but they're not as hot as habaneros. We recommend starting with just one in the sauce and then add more later if desired.

WHAT YOU'LL NEED (scroll to full ingredient list)
Chicken thighs
Lime
Sesame oil
Garlic
Soy sauce
Salt
Thai chili peppers
Honey
Butter
Garlic
Onion powder
Black pepper
Paprika
Extra-virgin olive oil
DIRECTIONS
STEP 1: MARINADE
Add all the marinade ingredients to a mixing bowl and mix well.
Add the chicken and fully coat in the marinade.
STEP 2: MARINATE
Cover the mixing bowl and marinate in the refrigerator for 4-6 hours, or at least 30 minutes.
STEP 3: COOK
Grill over medium heat until the internal temperature reaches 170°F (about 10 minutes).
Alternatively, the chicken can be cooked at 400°F for 12-15 minutes in an air fryer or 25-30 minutes in the oven.
Give the chicken a flip halfway through.
STEP 4: HEY-MAMI SAUCE
Add the olive oil to a preheated skillet over medium heat.
Add the chopped garlic and cook until fragrant, then lower the heat.
Add the butter, honey, onion powder, black pepper, and paprika.
Mix well and then bring to a low simmer for 10 minutes.
Mix in the chili peppers.
STEP 5: COAT
Add the cooked chicken to the pan and fully coat it with the sauce.

Makes 3-4 servings
2 lbs boneless skinless chicken thighs
MARINADE
1/3 C olive oil
2 lime, juiced
2 tsp sesame oil
2 cloves garlic, minced
1/2 C soy sauce
1/2 tsp salt
HEY-MAMI SAUCE
1-4 Thai chili peppers, thinly sliced
1/3 C honey
1/4 C butter
3 cloves garlic, roughly chopped
1 tsp onion powder
1/2 tsp black pepper
1/2 TBSP paprika
2 TBSP extra-virgin olive oil
Salt to taste
