Lemon Teriyaki Chicken

This Lemon Teriyaki Chicken is sticky and lemony, and coated in a simple homemade lemon teriyaki pan sauce.


Our favorite way to cook this chicken is on the grill, but it's also great in the oven or the air fryer (see cooking directions here). Once this chicken is done cooking, combine all the sauce ingredients in a pan and then coat the chicken in it.







DIRECTIONS

STEP 1: MARINATE
  • Combine the marinade ingredients in a bowl or large Ziploc bag and fully coat the chicken.

  • Allow to marinate in the refrigerator overnight, or at least 1 hour.

STEP 2: COOK
  • Grill the chicken over medium heat for 12-15 minutes, flipping occasionally.

    • Alternatively, the chicken can be cooked at 400°F in the air fryer for 25 minutes or in the oven for about 30 minutes with a flip halfway through. The chicken is done when the internal temperature reaches 170°F.

STEP 3: SAUCE
  • When the chicken is finished cooking, preheat a skillet or saucepan over medium heat.

  • Sauté the garlic with olive oil just until it starts to brown and get fragrant, then reduce heat to low.

  • Quickly add in the lemon juice, soy sauce, and butter so the garlic doesn’t burn.

  • Then add the onion powder, black pepper, sesame oil, ginger, honey, and salt to taste.

  • Simmer on low for a few minutes until it begins to thicken, then add the chicken to coat it in the sauce.

STEP 4: SERVE
  •  Top the chicken with the lemon zest, sesame seeds, and green onions, and serve with fresh lemon wedges.






INGREDIENTS

Makes 4 servings


MARINADE

  • 2 lbs chicken thighs, boneless

  • 3 cloves garlic, minced

  • 1 lemon juiced

  • 1/2 C soy sauce, low-sodium

  • 1 TBSP rice vinegar

  • 1 tsp kosher salt

  • 1/4 C olive oil


LEMON TERIYAKI SAUCE

  • 3 cloves garlic, coarsely chopped

  • 1 TBSP olive oil

  • Zest of 1 lemon

  • 1 lemon, juiced

  • 1/4 C soy sauce, low-sodium

  • 2 tsp onion powder

  • 1.5 tsp sesame oil

  • 2 tsp fresh ginger, finely minced

  • 1/3 C honey

  • 4 TBSP butter, unsalted

  • 1/2 tsp black pepper

  • Salt to taste


FOR SERVING

  • 1 tsp sesame seeds

  • 2 green onions, sliced

  • 2 lemons, sliced into wedges
