This One Pan Tequila Lime Chicken checks off two key factors we look for in a weekday meal: easy and delicious! Not only is this dish tasty and simple to make, it requires minimal cleanup as it's made all in one pan.

Chicken infused with zesty lime, fresh orange, and spicy serrano cooked perfectly over flavorful fluffy rice.

WHAT YOU'LL NEED (scroll to full ingredient list)
Deep pan or skillet
Chicken thighs
Lime
Tequila
Orange
Garlic
Serrano
Cilantro
Olive oil
Yellow onion
Garlic
Chicken stock
White rice
Chili powder
Onion Powder
Salt
DIRECTIONS
STEP 1: MARINADE
Combine the lime juice, lime zest, tequila, orange juice, onion powder, salt, olive oil, garlic, serrano, cilantro, and chicken in a bowl.
Marinate in the fridge for up to 24 hours, or at least 30 minutes. After removing the chicken, save the marinade.
STEP 2: SEAR
Sear the top side of the chicken thighs in a large skillet until it gets golden brown. Then set aside.
STEP 3: RICE
Sautee the onion and garlic. Then add in the remaining marinade, chicken stock, and white rice.
Bring to a simmer, then place the chicken on top of the rice
STEP 4: BAKE
Bake in the oven at 350°F covered for about 30 minutes until the chicken is cooked through. The chicken is done when the internal temperature reaches 170°F.
STEP 5: SERVE
Squeeze fresh lime juice over the whole dish and top with fresh chopped cilantro.

INGREDIENTS
Makes 4-5 servings
TEQUILA LIME MARINADE
2 lbs boneless chicken thighs
4 limes, juiced + zest of 1/2 lime
1/2 C tequila
1 orange, juiced
1 TBSP chili powder
1 tsp onion powder
1/2 tsp salt
3 cloves garlic, minced
1 serrano, sliced
1/4 C cilantro, chopped
1/4 C olive oil
RICE
1 yellow onion
2 cloves garlic, minced
1 C remaining marinade
1 C Chicken stock
1 C white rice, uncooked
2 limes for serving

Easy to make, not much depth of flavor. Slightly sour from the lime without much to balance it out.
