Steak Fajita Bowl

These Steak Fajita Bowls are savory, flavorful, and deliciously satisfying. This bowl is quick and simple to prepare and easily one of our favorite weeknight dishes.

Steak seasoned with bold and savory chili powder and cumin, over zesty cilantro lime rice, and topped with a colorful bell pepper and onion medley, and fresh creamy avocado sauce.

WHAT YOU'LL NEED (scroll to full ingredient list)
Deep pan or skillet
Steak
White rice
Yellow bell pepper
Red bell pepper
Red onion
Avocado
Greek yogurt or sour cream
Garlic
Cilantro
Lime
Chili powder
Cumin
Garlic powder
Onion powder
Paprika
Salt
DIRECTIONS
STEP 1: CILANTRO RICE
Cook rice
Add chopped cilantro and lime juice, and mix.
STEP 2: PEPPERS & ONION PREP
Slice the bell peppers and onions into strips, 1/4-1/2 inch wide.
STEP 3: AVOCADO SAUCE
To a blender, add the avocado, greek yogurt (or sour cream), garlic, lime juice, and cilantro.
Blend.
Add water as needed to reach a thick, creamy consistency.
STEP 4: STEAK
Chop the steak into large chunks and add to a hot skillet.
Season the steak with the chili powder, cumin, garlic powder, onion powder, paprika, and salt.
Cook over medium heat until cooked through to your desired doneness.
Remove steak from pan and tent with foil for a 10-minute rest.
STEP 5: PEPPERS & ONIONS
Add the sliced peppers and onions to the pan with a little cooking oil and cook over medium heat until softened.
STEP 6: SERVE
Serve in a bowl with the cilantro lime rice, fajita steak, peppers and onions, and top with the avocado cream sauce and lime wedges.
Optional: garnish with fresh cilantro.

INGREDIENTS
Makes 4-5 servings
STEAK
1 lb steak, cubed
1/2 TBSP chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
CILANTRO LIME RICE
1 C white rice
1 Lime, juiced
1/4 C cilantro, chopped
BELL PEPPER-ONIONS
1 yellow bell pepper, deseeded and sliced
1 red bell pepper, deseeded and sliced
1 red onion, sliced
AVOCADO SAUCE
1 ripe avocado
1/2 C Greek yogurt or sour cream
2 cloves garlic
2 limes, juiced
1/3 C fresh cilantro
Water as needed (2-4 TBSP)
